  • If you care about eating well and try to keep your meals balanced, this cod recipe is for you. Start with the fish. Fillets are ideal, but a whole fish works just as well. Thaw the cod (or any white fish), rinse it thoroughly, and cut it into skin-on, boneless fillets. Pat the pieces dry with a paper towel and cut them into rough chunks. Season the fillets with salt and black pepper, and don't skip the dried thyme — plus any other spices you like to round out the flavor. Set the fish aside to marinate while you get the onion going. Peel, wash, and dry the onion, cut it into a small dice, and sauté it in a skillet in hot olive oil for about 5 minutes, until translucent. Add the fish and sear the cod on both sides for about 2 minutes, stirring occasionally. Make a quick tomato pesto by blitzing the sun-dried tomatoes (with a little of their oil) in a blender — or use a store-bought sun-dried tomato pesto. Stir the pesto together with the sour cream, ground pepper, and Herbes de Provence, then pour the sauce over the fish. Simmer for 4–5 minutes. Don't overcook it: delicate fish fillets turn rubbery with too much heat, and you'll lose that tender texture. Serve garnished with parsley leaves and rosemary sprigs as a main on its own. For gluten-free or keto, try it over a cauliflower-and-broccoli mash; any raw or steamed vegetables also make a great side. Who says healthy food has to be boring?
