Cezerye (Turkish Carrot Confection)
A traditional Turkish carrot dessert. It's very easy and quick to make.
Cooking method

Step 1:
Grate the carrots on the coarse side of a box grater — you should get about 3 cups. Spread the grated carrots in a dry skillet.

Add the sugar to the carrots.

Stir everything together and let it cook over medium heat until all the liquid has cooked off.

Step 4:
Take the cooked carrots off the heat and transfer them to a bowl.

Step 5:
Add the finely crushed cookies and walnuts to the carrots. Mix everything thoroughly and chill it in the refrigerator.

Step 6:
Scatter the shredded coconut over a sheet of plastic wrap.

Step 7:
Dampen your hands with water and, pressing firmly, spread the set carrot mixture over the coconut.

Step 8:
Using the wrap, roll the coconut-coated carrot mixture into a log and refrigerate it for 1 hour.

Step 9:
Take it out of the fridge and cut it into slices; garnish with walnuts if you like.
