Beef Liver in Sour Cream with Onions

A tasty, wholesome, and simple beef-liver dish! Beef liver is very good for you — rich in vitamins A and B — and worth working into your meals to help boost the hemoglobin in your blood. There are plenty of ways to cook it, and one of the easiest is braised in a sour cream sauce. This method turns the liver out tender, juicy, and flavorful, and keeps the dish nourishing. Serve it with whatever side you like: pasta, grains, or vegetables.

    Gather the ingredients from the list. Rinse the beef liver under running water and remove the membrane: make a small cut along it and peel it off with your finger. Cut the liver into small pieces — slice it into a few slabs, stack them, cut lengthwise down the middle, then crosswise into pieces. If the liver is dark red, you can soak it in milk for about an hour. A good piece can range in color from dark red to brown.

    Peel the onion and cut it into half-rings or dice. Pour vegetable oil into a heavy-bottomed skillet and heat it. Add the onion and cook until translucent.

    Dredge the beef liver in flour, add it to the onion in the skillet, and cook until lightly browned, stirring now and then with a spatula so the liver browns on all sides.

    In a bowl, combine the sour cream with salt and ground black pepper. Full-fat, thick sour cream works best. Add any other spices you like. Pour in the water and stir until the mixture is smooth and even.

    Pour the sour cream sauce into the skillet with the liver and stir. Cover and simmer over low heat for about 20 minutes. Then uncover, stir, and simmer without the lid for about 7 minutes so the sauce thickens a little. Turn off the heat and sprinkle with chopped fresh herbs.
