Baltic-Style Beef Stroganoff with Caraway and Cream
Beef in a creamy sauce — finger-licking good! Beef Stroganoff is a classic of Russian cuisine. It's usually made with sour cream, but my version uses cream. Beef braised in a creamy sauce is wonderfully tasty, juicy, and tender, and the spices add a lovely aroma. Treat yourself and your family today by making this well-known dish at home — it's really not hard at all.

- How do you make Baltic-style beef Stroganoff with caraway and cream? Cut the beef across the grain into slices about ½ inch (1 cm) thick. Pound each slice with a meat mallet and season with salt and pepper to taste. Then cut the slices into strips roughly ½ × ½ inch (1 × 1 cm). Lightly dredge each strip in flour. Heat a skillet with oil and sear the meat in a single layer on all sides for about five minutes. Meanwhile, finely chop the onion and add it to the lightly seared beef. Cook everything together, stirring occasionally, until the onion is golden. In a small saucepan over moderate heat, warm the cream. Pour the warm cream over the seared meat and golden onion. Add the allspice, bay leaf, and caraway to taste. Let it all simmer, covered, over moderate heat for a couple of minutes. Serve the finished stroganoff with your favorite side or on its own. Enjoy!
- All oils are good only up to a certain temperature — the smoke point, at which the oil starts to burn and forms toxic compounds, including carcinogens. For how to gauge frying temperature and pick the best oil for cooking (and which to avoid altogether), see here.
