Fish and Seafood in White Wine

Fish in a refined sauce, with seafood in the mix — an elegant dish worth cooking! Cataplana is a signature dish of Portugal, and it's a must-try. It's traditionally made in a special clamshell-shaped pan that shares the dish's name. If you don't have one, a Dutch oven or a nonstick pot works well — or, better yet, make it in a slow cooker.

    1. Layer the assorted seafood and shrimp over the bottom of the pot.
    1. Next, add the diced vegetables.
    1. Arrange the pieces of assorted sea fish on top.
    1. Season with salt and pepper, then pour in the wine, oil, and water (fish stock is great here in place of the water).
    1. Cover and simmer over low heat for half an hour; in a slow cooker, use the "Stew" setting.
    1. Garnish the dish with a sprig of cilantro, or chop the cilantro and scatter it over the finished pan of fish and seafood in wine. Serve with a fresh vegetable salad.
