Step 1:

Step 2:
Wash the turkey fillet, dry it with paper towels. Rub the meat on all sides with poultry spices, paprika, salt and pepper. Leave to marinate for 20 minutes. If desired, you can make deep punctures with a knife over the entire area of the meat.
Step 3:
Now prepare everything for the marinade. Sour cream is better to take a fat content of 20-25%, so that the marinade is not very liquid and does not drain from the fillet. Honey for marinade needs liquid, it is easier to combine with all the ingredients. If your honey is candied, then melt it in the microwave or in a water bath and cool at room temperature.
Step 4:
In a bowl, mix sour cream, honey, Russian and French mustard and garlic passed through a press. Mix everything well. Fresh garlic can be replaced with 1-2 tsp of dry garlic powder.
Step 5:
Put the meat in a bowl, pour the marinade and thoroughly smear the sour cream-mustard mixture all over the meat.
Step 6:
Tighten the bowl with cling film and put it in the refrigerator for 2-3 hours, preferably overnight.
Step 7:
Put the fillets in a baking dish and spread the marinade on top.
Step 8:
Cover the mold with foil and put it in a preheated 180 ° C oven for 45-50 minutes.
Step 9:
Then remove the foil, brush with the remnants of the marinade, if there are any, and return the meat to the oven for about 30 minutes until a golden crust appears on the surface. The exact baking time depends on your oven.
Step 10:
Ready-made turkey fillet, soft and juicy, transfer to a dish, garnish with herbs and serve to the table. Bon appetit!
