Shortbread crumbly cookies with raisins

Made from simple products, crispy on the outside and soft on the inside! Cookies with raisins are easy to cook, even without special cooking skills! You will spend quite a bit of time. You can add any dried fruits, candied fruits to it. Serve with milk, tea, coffee - it's insanely delicious!

    How to make cookies with raisins? Prepare the necessary products. Remove the butter from the refrigerator in advance, it should be soft. Wash the eggs and dry them with napkins.

    Sort the raisins, remove the tails, pour hot water for 10 minutes. Then discard the raisins in a colander, draining the water. And rinse it well in cool water. Then dry well on a towel.

    While the raisins are soaking, start preparing the dough. To do this, beat the soft butter with a mixer with sugar and salt for about 5-6 minutes at medium speed. The mass should become light and lush. Then add the raw eggs and beat for another 3-4 minutes so that the sugar dissolves as much as possible.

    Mix flour with baking powder and sift into the whipped mass in 3-4 steps, stirring the dough with a spatula each time. At the end, you can stir with your hand. You may take more or less flour than I do - focus on the consistency of the dough.

    Add the grated zest and dried raisins to the dough, knead. The dough should be homogeneous and slightly stick to the hands. Wash your hands and wipe them dry, so when forming cookies, the dough will not stick completely.

    With your hands, form balls the size of walnuts and place them on a baking sheet covered with parchment or a baking mat. Lightly press the balls with your fingers so that they take the shape of a tortilla. I used a small lid for this (see photo). The thickness of the cookies is about 0.8-1cm. Do not make it thinner, otherwise it will turn out stiff.

    Bake the cookies in a preheated oven, at a temperature of 200°C for about 15-16 minutes. Determine the exact time and temperature of baking according to your oven. Cookies are well browned from the bottom, from the top - less. Cover the finished cookies with a light cotton towel and cool directly on the baking sheet.

    Inside the cookies are porous, crumbly. Wait until it becomes warm, and serve, tasty and cooled. It turns out 32 cookies, these are two large baking sheets, 16 pieces each. They do not increase in size much, but the distance between them should be left, so the cookies are baked more evenly.

As part of the dough, the zest can be changed to vanilla, cinnamon, according to preference. Raisins can be replaced with poppy seeds, various candied fruits, nuts.. or bake it without any additives - it will always be delicious!
