Step 1:
How to make a Zebra cake in the oven on kefir? Very simple! First, prepare the necessary ingredients. It is desirable that the eggs and kefir are at room temperature, so take them out of the refrigerator in advance. Wash the eggs and dry them with napkins.
Step 2:
Beat the eggs into a separate bowl and stir with a whisk until smooth, gradually adding sugar. The mixer does not need to be used, since we do not need a lush air mass. And it is also desirable not to beat the dough with a whisk, but to mix it. If there are a lot of air bubbles in the dough, they will all rise to the surface when baking and spoil the surface of the cake.
Step 3:
Melt the butter and cool to room temperature.
Step 4:
Constantly stirring the egg mixture, pour the melted butter into it in a thin stream.
Step 5:
Then pour in the kefir at room temperature and mix everything until smooth.
Step 6:
Sift flour with soda and pour parts into the dough, stirring each time until smooth. Instead of soda, you can use baking powder, because with soda the reaction is stronger and the cake can rise and crack a lot, and this will spoil the beautiful top. Keep in mind that you may have more or less flour than me - focus on the consistency of the dough.

A homogeneous, flowing dough of medium density should be obtained.

Divide the dough into two equal parts.

Pour boiled water into the cocoa and mix until smooth.
Step 10:
Pour cocoa into one part of the dough and stir until smooth. If desired, you can add vanilla flavor to the second white part.
Step 11:
Cover the baking dish (20-22 cm in diameter) with parchment and grease with butter. Pour 2 tablespoons of white mass into the center, then 2 tablespoons of chocolate mass. Alternating between both types of test, fill out the entire form. To make the circles smoother, the spoon should be held strictly vertically.
Step 12:
Make a pattern on the surface with a toothpick. Place the cake in a preheated 180 ° C oven for about 35-40 minutes. Determine the exact time and temperature of baking according to your oven.
Step 13:
Cool the finished cake, remove from the mold, cut into pieces and serve to the table. Bon appetit!
