Step 1:
How to make a capital cake with raisins according to GOST? Prepare the products. Important condition: all ingredients must have the same temperature - room temperature. Therefore, remove the eggs and butter from the refrigerator in advance. Take the raisins without seeds. Wash the eggs and dry them with napkins.
Step 2:
Rinse the raisins thoroughly under warm running water, and then dry them by placing a thin layer on a napkin or paper towel.
Step 3:
Take the soft butter. Add regular and vanilla sugar to it. Using a mixer, beat the butter and sugar until fluffy.
Step 4:
Without stopping beating, add one egg at a time. To do this, it will be more convenient to break them into a separate cup. After each egg, mix the mass well.
Step 5:
As a result, a homogeneous liquid mass should be obtained.
Step 6:
Add raisins to it. Stir with a spatula so that the raisins are evenly distributed.
Step 7:
Sift all the flour and baking powder into a bowl in a whipped mass. Sifting saturates the flour with air, so baking becomes more lush and airy.
Step 8:
With a mixer at low speed, stir the flour until the dough is completely homogeneous.
Step 9:
Take a rectangular shape. It was in this way that the Capital's cupcake was baked during the Soviet era. My form is 20*9 cm in size. I use a silicone mold, it does not need to be prepared in any way. If your mold is made of a different material, then lubricate it with a thin layer of butter or vegetable oil. Put the dough into the mold. Smooth it out with a spatula. Be sure to make a furrow in the middle with a wet spatula so that the cupcake bursts beautifully on it when baking, and not randomly.
Step 10:
Bake the cupcake in an oven preheated to 170 ° C for about an hour and a half (be guided by your oven). The cupcake will rise strongly and burst along a pre-drawn strip. Cool the hot cupcake right in the mold, then take it out and sprinkle with powdered sugar on top.
One of our favorite cupcakes. It is prepared quickly, it absolutely always turns out, the whole family likes it. You can also bake this cupcake in the form of small cupcakes. Then the baking time should be reduced to 30 minutes.
Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
