Step 1:
How to bake fluffy yeast dough pies with milk? We will prepare the dough in the fastest way known to me, which proved itself well. In a bowl, sift flour, pour yeast, sugar, salt, pour warm milk and melted butter, beat in an egg. You can heat the milk to 60 degrees and dissolve the butter in it, just the milk will cool down to the desired temperature of 40 degrees - so time will be saved even more.
Step 2:
Knead the dough with a mixer with nozzles "for the dough " at the first speed. It took me 1.5 minutes. The dough turned out soft and lagged well behind the walls of the bowl. The kneading is over.
Step 3:
Put the dough in a bowl greased with vegetable oil, cover with cling film and leave in a warm place without drafts for 40 minutes to rise. I usually put the dough near the lit stove.
Step 4:
After the allotted time, the dough should rise well.
Step 5:
We spread it out of the bowl and divide it into 6 equal parts. I plucked off a piece and weighed it on the kitchen scales - each piece came out weighing about 65 grams. We won't need flour.
Step 6:
We knead each piece with our hands into a flat cake, spread the filling and pinch the edges, forming a rectangular pie. I had a stuffing made of minced meat, but any one will fit this dough: both salty and sweet. It can be stewed cabbage, liver, meat, mushrooms, rice, cottage cheese, fresh berries, jam, apples, etc .
Step 7:
We put the formed pies on a baking sheet covered with baking paper, it is not necessary to lubricate. We do not cover them tightly with cling film and leave them for proofing for 15 minutes.
Step 8:
Remove the film, lubricate the blanks with a mixture of egg yolk and milk.
Step 9:
Bake in the oven at 180 degrees for 15-20 minutes until browning. Bon appetit!
Any hostess can cope with this recipe, even one who is not very "friendly" with the dough.
The specified number of ingredients will make 6 pies, but you can always make them more by increasing the number of products.
A little tip: if you plan to use fresh berries in the filling, then add a small amount of dry jelly to them so that the juice does not leak out and the integrity of the pie does not deteriorate.
In order for the oven to have time to heat up to the desired temperature, turn it on in advance (10-20 minutes before the start of cooking).
Keep in mind that everyone's ovens are different. The temperature and cooking time may differ from those specified in the recipe. To make any baked dish successful, use useful information about the features of ovens !
