    How to bake a mannikin in the oven on sour cream? Prepare the necessary ingredients. Take sour cream of medium density, fat content from 15 to 25%. Sour cream is needed at room temperature, so take it out of the refrigerator in advance. Eggs need large, selected and fresh. You can replace apple cider vinegar with regular table vinegar (9%). Or even replace soda and vinegar with 1 tsp baking powder. Use the highest quality flour.

    Put sour cream in a bowl and add semolina. Mix everything well until smooth and leave the mass for 30 minutes so that the cereal swells. If your sour cream is not very moist and mixes heavily with semolina, then you can add 2-3 tablespoons of milk.

    Combine eggs with sugar and beat with a mixer until fluffy. You do not need to beat for a long time, so as not to over-beat the eggs, because you will need to beat after adding the rest of the ingredients. A lot of small air bubbles will appear on the surface of a properly whipped mass.

    Add the swollen sour cream-semolina mixture to the eggs beaten with sugar and mix.

    Pour in the sifted flour with soda and mix again until smooth with a mixer at low speed or with a spoon.

It is very important to properly extinguish soda with vinegar - this should be done in the test itself, not in a spoon, as we are used to doing, otherwise the whole reaction with the release of carbon dioxide will take place outside the test and there will be little sense from it.

    Quickly mix the dough. If everything is done correctly, bubbles will appear in the test, indicating the reaction of soda with vinegar.

    Pour the finished dough into a greased and semolina-sprinkled baking dish. The diameter of my form is 18 cm. A larger shape is also suitable - 20-22 cm . Put the mannikin in a preheated 180 ° C oven for about 40 minutes. Be guided by the time of your oven. If the mannik is browned on top, and the inside is not ready yet, cover the surface with a double layer of foil.
