Five-Minute Honeysuckle Jam

A bright, unusual flavor in just five minutes! Honeysuckle isn't the best-known berry — its taste is a bittersweet, sweet-and-sour one that isn't for everyone. So many cooks will be glad to learn it makes a wonderfully delicious jam. On top of that, honeysuckle contains selenium, an element that helps keep you young and that the body needs.

  • To make "Five-Minute" jam, use honeysuckle berries and sugar in equal proportions. Wash and pick over the berries, then put them in a pot with the sugar (an enameled pot is best, for longer keeping). Set it over the lowest heat to dissolve the sugar. If you like, you can add a couple of tablespoons of water — the syrup will cook faster with it. Don't forget to stir, or the jam will start to scorch. Bring it to a boil, then cook for five minutes (living up to the recipe's name!), skimming off the foam now and then. That's it — our "Five-Minute" jam is ready! To preserve it for the winter, cool the jam, then boil it again for five minutes and seal it in sterilized jars. Enjoy!
