Very simple, very easy, very fast, very cheap! This sugar syrup for soaking sponge cake and layer cakes is made from water and sugar. You can add anything you like to it: vanilla, brandy, liqueur, juice — or any of the ready-made food flavorings sold in stores.

    How do you make sugar syrup for soaking a sponge cake? You'll need just two basic ingredients — sugar and water. And to add flavor, I'll use brandy.

    To cook the syrup, take a small pot or saucepan. Pour in the required amount of water.

    Add the sugar and set the pan on the heat. Stirring, bring the water and sugar to a boil. There's no need to keep boiling it — just let the sugar dissolve completely in the hot water.

    Take the hot syrup off the heat and cool it to just lukewarm. Cooling it to 35–37°C is enough. Because of the large amount of sugar, the syrup comes out a little thick. That's how it should be. This is a basic recipe for sugar soaking syrup — you can soak any cake with it.

    For extra flavor, at this point you can add any flavoring. I use brandy. The alcohol itself cooks off, but the aroma stays. You can also use rum, amaretto, fruit juices, berry syrups, wines, liqueurs, or tinctures for flavor. Add just a little, so the syrup doesn't get too thin.

    Only add the flavoring to cooled syrup. Otherwise its aroma will fade and its taste may be thrown off by the high temperature. Soak any prepared sponge with the cooled syrup and assemble the cake.

    With a fragrant soaking syrup like this, your cake will never be dry. Use the syrup as intended!

  • To assemble the cake, neither the prepared sugar syrup nor the sponge itself should be hot. Be sure to give them time to cool. And give the sponge itself extra time to rest in the refrigerator, wrapped in cling film.
  • For cooking, it's better to use filtered or bottled water with a neutral taste. If you use tap water, keep in mind that it can give the dish an unpleasant off-flavor.
