Step 1:
How to bake oatmeal cookies with raisins at home so that it is not worse, or even tastier than store-bought? Very simple! First, prepare the necessary ingredients according to the list. Oat flakes come in different types depending on the grinding.You can take any, but keep in mind that the smaller the flakes, the more homogeneous and softer the finished cookies will be. I took extra flakes, that is, the smallest and softest and additionally rubbed them between my palms, grinding even more.
Step 2:
Wash the raisins, pour hot water and leave for 5-7 minutes. Then drain the water, dry the raisins on a paper towel. Raisins do not necessarily need light, you can cook from any raisins that you can buy. But it is better to take medium-sized raisins, with it the dough will turn out more homogeneous and will not fall apart.
Step 3:
Beat soft butter at room temperature with sugar until fluffy. Cane sugar or, as it is also called, brown sugar is suitable for any kind. I have Demerara. If you don't have brown sugar, you can replace it with plain white.
Step 4:
Add oat flakes to a bowl of butter. Sift the flour. Also add egg, baking powder and cinnamon.
Step 5:
Mix everything together until a homogeneous sticky slightly crumbly dough is obtained. The dough should be collected in a lump. If your dough is too crumbly and does not hold its shape when trying to roll a ball out of it, you can add 1-2 tablespoons of melted butter or water.
Step 6:
Add raisins to the dough.
Step 7:
Knead the dough thoroughly with your hands again.
Step 8:
Roll 15-16 identical walnut-sized balls out of the dough.
Step 9:
Cover the baking sheet with parchment and sprinkle flour on top so that the cookies do not stick. Place the dough balls on a baking sheet and flatten them slightly with your fingers, giving the liver a rounded shape. Bake oatmeal cookies for 20-25 minutes in a preheated 180 ° C oven until golden brown. The exact time depends on your oven and the size of the cookies. Therefore, constantly check the baking for readiness. Enjoy your meal!
