Step 1:
How to make a chocolate cake with cherries? The first step is to bake a biscuit. Prepare everything you need for him.
Step 2:
Combine eggs and brown sugar in a whipping bowl. Whisk everything together to a fluffy, thick foam at the maximum speed of the mixer.
Step 3:
Melt the butter in a small ladle and add the broken chocolate to it. Stir until the chocolate has completely melted.
Step 4:
Separately mix the dry ingredients: almond flour, cocoa and soda. To the beaten egg mass, mix the chocolate and flour mass. Mix by hand, using a whisk, so that the dough remains lush.
Step 5:
The chocolate dough turns out to be medium thick.
Step 6:
Detachable baking pans (16 cm), cover with parchment and bake 3 separate cakes in a preheated oven, at 180 degrees, for 15 minutes. Be guided by your oven.
Step 7:
Then cool them, fold them on top of each other together with paper and wrap with cling film. Put them in the refrigerator overnight so they can lie down. To assemble the cake, separate the biscuits from each other and remove the parchment from them.
Step 8:
To prepare the chocolate cream cheese, prepare the necessary ingredients.
Step 9:
We will use cherry for filling. Frozen berries must be thawed. Drain the juice from the berries into a separate bowl, and then soak the biscuits with it.
Step 10:
For the cream, heat the cream to a hot state and add the broken chocolate to them. Stir until smooth. The chocolate will melt quickly. Cool the finished chocolate mass to room temperature.
Step 11:
Combine the chocolate mass and cottage cheese.
Step 12:
Mix everything with a mixer until smooth. The finished cream will be stable enough. This amount is enough to assemble a cake with a diameter of 16 cm, rough and final alignment.
Step 13:
Smear the biscuits with chocolate cream and lay out the cherry berries.
Step 14:
Assemble the cake. Coat it on all sides with a thin layer of chocolate cream. This will be a rough alignment. It will bake in itself all the extra crumbs. Put the cake in the refrigerator to freeze for a few hours.
Step 15:
Coat the frozen cake with chocolate cream again and smooth it out. The cake is ready! Everyone can decorate it according to their taste. I made chocolate smudges on the cake and decorated it with fruit.
