Step 1:
Grate the cheese on a coarse grater. Cheese should be taken real, not a cheese product. Also, the cheese should be of good and proven quality and fresh.
Step 2:
Pour the cheese into a deep bowl, pour the sifted flour and pepper mixture, then mix the contents well with a spoon or fork so that the flour envelops the cheese.
Step 3:
Separate the yolks from the proteins, place them in a small bowl and whisk with a fork until smooth. For proteins, take a bigger bowl, add 2 pinches of salt to them and beat them into a thick foam with a mixer. The proteins should be chilled - if the eggs are from the refrigerator, then just.
Step 4:
Gently pour the yolks into the whipped whites and mix with a silicone spatula in the top-down direction. An air homogeneous mass is obtained.
Step 5:
Next, add the cheese mass to the egg mixture. Mix everything thoroughly. The cheese dough for tortillas is ready.

Cover the baking sheet with parchment or baking paper, grease with melted butter and lightly sprinkle with flour. We spread a tablespoon with a pile of dough and form round flat cakes. From the resulting dough I got 5 cakes with a diameter of 10 centimeters. I baked 4 pieces, and then baked another one.
Step 7:
Put the blanks on a baking sheet in a preheated 220 degree oven and bake for 10-12 minutes until browning. Tortillas should not be overexposed, so that they do not come out dry and too fried. We remove the finished tortillas from the baking sheet and transfer them to a dish.
They are prepared in a matter of minutes - the dough is made quickly and the cakes themselves are baked quickly. You will easily have time to cook them for breakfast with cocoa, coffee or tea. They turn out very tasty, especially when hot - so don't let them cool down!
