Clean the macrurus, trim the fins, rinse the fish, remove the black film inside the abdomen. Season the carcasses with salt and pepper inside and out, pour lemon juice. Marinate for 20-30 minutes.

Fill macrurus carcasses with sprigs of greenery. Preheat the oven to 200 degrees in advance. Pour a path of vegetable oil on a sheet of foil, put the carcasses and pour vegetable oil on top again. Wrap the fish in foil and place on a baking sheet. Bake at a temperature of 200 degrees for 15-20 minutes. Then open the foil and bake for another 10-15 minutes.
