Take the frozen mackerel out of the freezer ahead of time and let it sit at room temperature to thaw on its own. Use as much onion skin as you like — the more there is, the deeper the color of the finished fish. One or two handfuls is enough.

    Rinse the onion skins in water. Then put them in the pot you'll cook the fish in. Cover with water and set over the heat.

    Cut the fish into pieces and lower them into the boiling water with the onion skins. Wait for the water with the fish to come back to a boil and cook the fish for exactly 3 minutes.
