Cooking method
To prepare the crumpets, take one glass of brine (I have cucumber), one glass of sugar, two eggs (optional), four tablespoons of odorless vegetable oil (you can take more oil up to 1/2 cup, then the dough will turn out more sandy and the crumpets will turn into brine cookies), soda and flour.
And so, let's get started!
1. Take a deep bowl and pour into it a glass of brine and vegetable oil.
2. Add a glass of sugar and one teaspoon with a small slide of soda. Soda is quenched with brine. If everything hissed, covered with thick foam, and then the mixture turned gray, do not be alarmed. So you have a real good pickle! Everything is going as it should!
3. Beat the eggs into the dough and mix well.
4. In several approaches, we mix the sifted flour into the dough. Four glasses is an approximate amount, since flour from different manufacturers is different in density, then the amount of it in the recipe may vary. You need to look at the consistency of the dough.
5. We make balls from the dough. Each ball is rolled out a little with a rolling pin. It is not necessary to roll out thinly, the thickness of the resulting round cake should be 1-1.5 centimeters. We prick each one with a fork in several places so that the crumpets do not burst during baking.
6. Bake the crumpets at a temperature of 190-200 degrees for about 20 minutes (depending on your oven).
Such crumpets on brine can optionally be made with stuffing. I like it with cottage cheese. They turn out like Soviet sochni (sochniki) from the school cafeteria.
For the filling, mix the cottage cheese with sugar and vanilla. We roll out the dough on brine a little thinner than for ordinary crumpets. We spread a little curd filling on the half of a round tortilla and cover it with the other half.
