Step 1:
How to bake ginger Christmas cookies? Prepare the products according to the list. You can take the oil directly from the refrigerator. It is better to take liquid honey or replace it with molasses. Spices should all be ground, you can replace them with a special gingerbread mixture.
Step 2:
In a saucepan with a thick bottom or a saucepan, pour ordinary sugar, brown sugar, add honey and water. Stirring constantly, bring the mixture to a boil. Remove from the heat. Both types of sugar should completely dissolve.
Step 3:
Add all the spices, butter and soda to the sugar mixture. The mass will change color slightly. While stirring, dissolve all the ingredients. Cool the mixture to room temperature. In the next step, add the flour in parts, watching the consistency of the dough. You may take more or less flour than I do.
Step 4:
Add flour to the cooled mixture and knead the dough. Assemble the dough into a ball. It is easy to assemble the dough into a ball if you throw it in your hands, but it is difficult to work with such a dough - it sticks strongly to your hands. Wrap the dough in clingfilm and refrigerate overnight or for at least three hours. This dough can be stored in the refrigerator for several days for use later. Remove the cooled dough from the refrigerator. Turn the oven on at about 170 degrees.
Step 5:
Plucking pieces from the dough, spread each on the baking parchment in turn. Cover the top with another sheet and roll out the dough between the two sheets. Roll out into a very thin layer, remove the top sheet of paper and cut various shapes with cookie cutters. Remove the excess dough. Transfer the cookie paper to a baking sheet and bake in a preheated oven for about 5-10 minutes. Focus on your oven.
Step 6:
Remove the finished cookies from the paper and cool. It turns out very crispy (if the dough was thinly rolled out). Serve it with tea, milk, hot chocolate or with grog and mulled wine. In a closed container, such cookies can be stored for many days!

There are no perishable ingredients in its composition, sugar and honey act as preservatives, so it can be stored for a very long time. It can be prepared for the whole family for the holidays, or you can put it in gifts for Christmas and New Year for guests.
