Step 1:
Prepare all the ingredients.If you bought frozen mackerel, it needs to be thawed naturally. Leave it at room temperature for 1.5-2 hours. The main secret of cooking mackerel in the oven is that it is not necessary to completely defrost the fish, you can start cooking it when it remains a little frozen, so it will be easier to cut the fish.
Step 2:
Remove the insides, fins and tail. If you want to leave the head of the fish, then you need to cut out the gills. Remove the dark film. Thoroughly rinse the mackerel under running water and dry it with a paper towel. In no case should you defrost mackerel in the microwave.
Step 3:
Chop sweet black pepper with peas in any way convenient for you. I'll do it with baking paper and a kitchen hammer. Mix pepper and salt. Rub the mackerel outside and inside with pepper and salt.
Step 4:
Let's do the vegetables. Grate the carrots on a fine grater.
Step 5:
Cut the onion into small pieces, you can quarter rings. Pour 2 tablespoons of vegetable oil into a preheated frying pan. Add the onion, cook until transparent, just a couple of minutes. Add the carrots and cook until both ingredients are soft.
Step 6:
Stuff the mackerel with onions and carrots. Wrap the fish in foil belly up. Bake in a preheated oven for about 30-35 minutes at a temperature of 180 degrees. 5-10 minutes before the end of cooking, unfold the foil so that an appetizing crust forms on the surface of the fish.
To cook baked mackerel in foil in the oven, you need a minimum of ingredients: mackerel, carrots, onions, lemon and spices. Mackerel is baked in foil, this ensures uniform cooking outside and inside.
