Salad with Smoked Chicken and Fresh Cucumber
A tasty, hearty, and simple salad with cucumber and smoked chicken. Fresh cucumber adds juiciness, while smoked chicken brings a savory kick. It comes together quickly from easy-to-find ingredients, but the result will please any food lover.

Step 1:
How do you make a salad with smoked chicken and cucumber? You can use any cut of smoked chicken, but I prefer the leg — to me, smoked breast comes out a little dry in a salad. Boil the eggs ahead of time, about 10 minutes, until hard, and cool them in cold water. Use a good hard cheese; go by your own taste — if you enjoy the cheese on its own, the salad will be delicious.

Step 2:
You can make the salad in a deep bowl and serve it as is, or plate individual portions using a serving ring. Remove the skin from the smoked chicken and cut the meat off the bones. Cut the meat into small cubes and put it in a deep bowl or salad bowl.

Peel the pre-boiled, cooled eggs and cut them into small cubes. Add the eggs to the bowl with the chicken.

Wash the fresh cucumbers under cold running water and trim the ends. Peel them if needed (if the skin is too tough or damaged). Cut the cucumbers into small cubes and add them to the salad.

Grate the cheese on the coarse side of a grater. Add the grated cheese to the bowl with the other ingredients.

Wash and dry the fresh dill. Chop the dill and add it to the salad. Dress the salad with mayonnaise and mix. Taste, and add salt and ground black pepper if needed.

You can serve the salad right after making it or chill it in the refrigerator first. It works as a dish on its own or alongside others, such as boiled potatoes.
- Always wash eggs before using them, since even a shell that looks clean can carry harmful bacteria. A food-safe wash and a brush work best.
- This salad comes together very quickly when you have everything on hand (and the ingredients can be bought ahead and kept in the fridge for several days). It's easy to throw together for unexpected guests or a holiday dinner — even a beginner can manage it.
- It's best to make your own mayonnaise — it's tastier and better for you. You'll find some great homemade mayonnaise recipes here. You can also use sour cream or plain yogurt for the dressing, on their own or mixed with mayonnaise in any ratio you like — that will cut down the calories.
- Everyone's sense of salty, sweet, bitter, sharp, sour, and spicy is different, so always add spices and seasonings to your own taste. If you're using a seasoning for the first time, remember that some are especially easy to overdo — chili pepper, for one.
