Sugar-Free Gooseberry Jam

A tasty, wholesome gooseberry jam with no sugar! Not everyone can enjoy ordinary jam because of the sugar — some for health reasons, others watching their figure or following a diet. But there are recipes for jam made without any sugar, and quite a few of them, with all sorts of add-ins. The simplest and most versatile is sugar-free gooseberry jam, because gooseberries are the richest in fruit acids, which keep the jam from spoiling even without sugar or any other additives.

Cooking method

    To make this gooseberry jam, all you need is gooseberries and the right equipment: a heavy-bottomed pot, a cotton towel, and small jars with lids. Wash and sterilize the jars first. Use whatever gooseberries you have and like — green or red. Wash them well and pinch off the blossom and stem ends. You can even make this treat in winter if you have gooseberries in the freezer.

    The jam is made by reducing the berries down, with no sugar and no other additives — though you can add lemon or orange for a pleasant citrus note. If using frozen berries, thaw them and proceed the same way. Pour water into the pot and lay a cotton towel on the bottom. Fill the glass jars with gooseberries up to the shoulders. The water in the pot should come up to the shoulders of the jars, but not so high that it splashes into the jars as it boils.

    Turn on the heat, bring the water to a boil, and cook over high heat for about 30 minutes. Reduce the heat and cook on low for about 1 hour. The berries will release their juice and cook down.

    As the berries cook down and settle, consolidate them into one jar and top up the others with a fresh batch of berries. Take the first jar of finished jam out of the pot and seal it with a sterilized lid. Do the same with the other jars as the jam finishes. Smaller jars are best, so you can use up the jam quickly once it's opened.

    Turn the jars upside down, wrap them in a towel, and leave them overnight to cool at room temperature. Then store the jam in the refrigerator or another cool spot. Your tasty, wholesome sugar-free jam is ready. It keeps well, but it's so delicious and fragrant that it won't last long in the pantry. Enjoy!
