    Grate the butter from the freezer on a coarse grater into a deep bowl. To make the oil easier to rub and it does not melt from the heat of the hands, roll it in flour.

    Add the sifted flour and 2/3 of the total sugar. Mix thoroughly for a few minutes to make small lumps. The result is a loose mixture with a lot of lumps.

    Extinguish the soda with vinegar. To do this, take a tablespoon, put a quarter teaspoon of soda in it, and drop a small amount of 9% vinegar or lemon juice on top. Soda will hiss strongly — a reaction will begin with the release of carbon dioxide, it will raise your baking. Add the slaked soda to the dough.

    Pour light beer into the dough and knead it with your hands. The dough turns out pliable and elastic, it does not stick to the hands at all. Assemble the dough into a ball, wrap it in plastic wrap and put it in the refrigerator for 1 hour. Do not be afraid of the presence of alcohol in the test. During baking, it will evaporate, leaving only the aroma, and will raise the dough due to brewer's yeast.

    Turn on the oven to preheat to 180 degrees. Take the cooled dough out of the refrigerator, roll it out on a flour-dusted table into a 0.5 cm thick layer. Using round molds or a glass, cut out circles from it.

    Use a knife to make three identical incisions along the edges of each cookie. Sprinkle with sugar. If necessary, you can lubricate each cookie with milk or beaten egg to keep the sugar better. Place the cookie blanks on a baking sheet greased with oil or covered with baking paper. Place the cookie sheet in the preheated oven for 20-25 minutes. The cookies should turn golden.
