    Cut the butter into pieces and put it in the microwave for 10-20 seconds. The main part of the oil will become soft. A little oil will start to melt.

    Add sugar to the butter bowl and rub them together. To prepare the dough, it is enough to use a whisk. Everything is mixed well by hand.

    Then mix the eggs into the butter mass.

    Add soda and a pinch of vanilla. Gradually add flour and knead the shortbread dough. Do not add all the flour at once. Focus not on the amount of flour, but on the consistency of the dough. It may need a little more or less. At this stage, it is convenient to use a wooden spatula. When the dough becomes denser, you can knead it with your hands.

    It is not necessary to knead the shortbread dough for a long time, otherwise it will get clogged with flour and become hard. As soon as the dough began to gather into a ball and stopped sticking to your hands, do not add flour anymore. Divide the finished dough into two unequal parts. Put the smaller part in the freezer for 1-1.5 hours so that it becomes firm.

    Cover the bottom of the detachable baking dish (26-28 cm) with parchment. Spread most of the dough over the entire surface and form small sides.

    Spread thick jam all over the dough. I have blackcurrant jam. Extra sides can be rolled up on top of the jam.

    Take the frozen dough out of the freezer and grate it over the entire surface of the pie. The grated dough looks like curls. Put the pie in the oven, preheated to 190 degrees for 30-40 minutes. Be guided by your oven.

    The finished cake will become an appetizing golden color. Remove it from the mold and cool it. Have a nice tea party!

Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.
