Homemade Chocolate Pudding
The richest, most chocolatey chocolate pudding! This homemade chocolate pudding has a wonderfully pleasant texture — soft, just firm enough, and very, very delicate. The most important ingredient here is the cocoa. For the best-tasting dessert, use the finest cocoa powder you can: it should be a rich color, with a bold chocolate flavor and a slight bitterness. Poor-quality cocoa can ruin the dish entirely — the color comes out muddy and the taste rather flat.

Step 1:
To make homemade chocolate pudding, use fresh medium-fat milk, granulated sugar, cornstarch, and cocoa powder. You'll also need just a tiny bit of salt to balance the flavor.

Pour the milk into a small saucepan and heat it to about 105°F (40°C) — the milk should be neither hot nor cold.

In a separate bowl, combine and mix the cocoa powder, granulated sugar, fine salt, and cornstarch. If you add these one at a time without mixing first, the cocoa and starch may seize into lumps that are very hard to stir out later. So play it safe and combine them first.

Take the milk off the heat, add the starch-sugar-cocoa mixture, stir, and return the pan to the heat.

Heat the mixture to a boil, stirring constantly — it will start to thicken noticeably. Cook the pudding for one minute, then remove it from the heat.

Pour the hot pudding into small individual molds and let it cool.

You can serve the finished pudding either warm or chilled.
