Cooking method
Heat the milk slightly to a warm state. Pour it into a bowl and add 1/10 of the sugar. Pour in the fast-acting yeast and mix well.Cover the bowl with a lid or a clean towel and leave in a warm place for 10-15 minutes to activate the yeast.
Meanwhile, melt the butter in the microwave.
As soon as white foam forms on the surface of the bowl, you can proceed with further actions. Add half a portion of melted butter to the mass with yeast, add salt and mix.
Sift wheat flour (premium white flour is suitable) through a sieve. In small portions, put it in a bowl with yeast, then knead a soft dough that does not stick to your hands. You can knead the dough with a food processor or with your hands, the main thing is not to knead it - the dough should remain soft as fluff. Put the dough back in the bowl and cover it again with a lid or towel. Leave in a warm place for about an hour or a little more, so that it fits and increases in volume.
Next, knead the dough, sprinkle it with flour, and divide into four equal parts. Roll out each piece of dough with a rolling pin into a thin circle and lubricate its surface with the remaining melted butter. Cut each circle into 8 equal segments using a pizza knife. And then roll each of them with your hands into a bagel, starting from the edge and inside the circle.
Break the egg into a deep dish and whisk into a foam with a whisk. Pour the sugar into a large flat plate.
Dip each bagel first in an egg, and then in sugar from all sides.
Then put the bagels on a baking sheet, previously covered with parchment. Leave in the heat for half an hour so that the dough comes up again.
Turn the oven on 180 degrees.
Put the bagels to bake in a preheated oven for about 35-40 minutes until fully cooked.
As soon as the bagels are covered with a ruddy appetizing crust, they are ready! Let them cool down a little and you can start tasting.
