Very tasty and hearty pie with apple and cottage cheese filling! Banitsa is a Bulgarian pie made from ordinary extract dough, very thin layers of which completely cover the filling and roll up with a snail roll. Everything is simple, but very tasty and looks incredible!

    How to make a Bulgarian Banitsa? Prepare all ingredients. Choose apples of medium size, sour or sweet and sour varieties. It is better to get the oil out of the refrigerator in advance. It should be soft (but not melted).

    Prepare the dough: sift the required amount of flour, make a hole in the flour, add water, egg. Mix and knead a sufficiently tight dough (it should gather into a ball). Since the flour differs in its properties, I advise you to pour not all the flour into the bowl, but 50-70 grams less. So you will be able to decide when kneading the dough whether you need to add the remaining 50-70 grams or whether the desired consistency has already been achieved.

    That's the dough turned out. Note that the flour may be slightly more or slightly less than indicated in the recipe. Look at the consistency!Set the dough aside for 30-40 minutes and do the filling.

    Rub the cottage cheese with butter and sugar.

    Add eggs, vanillin (I used vanilla sugar, read the dosage and methods of adding vanillin in the instructions on the package), flour and honey. And mix everything well.

    The curd filling is ready! If it turns out to be runny, add a little more flour.(It is inconvenient to work with too liquid filling, it will spread out on the dough)

    Peel the apples, cut into small cubes.

    Back to our test. Divide the dough into 4 parts. Roll out each of the parts as thinly as possible into a rectangular layer.

    It should turn out something like this. Leave the dough to dry a little. Meanwhile, melt the butter for the filling (50 g) and cool. Next, lubricate the dough layers with melted butter.

    Carefully spread the curd filling on each layer of dough, not reaching the edges of about 2 cm.

    We spread sliced apples on the curd filling.

    Now bend the edges of each layer "with a boat" and gently twist into a roll. Roll the resulting roll into a spiral and put it in a baking dish, in the center, also oiled. Wrap the subsequent rolls around the resulting spiral.

    Brush the Banitsa with melted butter on top. This is what our pie looks like in its raw form. Place in a preheated oven at 175-205 degrees for 35-55 minutes .(I had the pie ready in 40 minutes at a temperature of 200 degrees, you focus on the features of your oven)
