Step 1:
How to make a classic brownie with cocoa? Prepare the products. Take natural cocoa powder, without additives, a drink like Nesquik will not work. You can reduce the amount of sugar if you don't like sweets too much. You can take brown sugar instead of white sugar, then the brownie will get a caramel taste.
Step 2:
Take the highest quality butter, natural, conforming to GOST, without vegetable additives. Melt it in any way you can. I melted it in the microwave. Read about other methods at the end of the recipe.
Step 3:
Take a dough bowl and pour the melted butter into it. Add sugar and mix with a whisk. In warm butter, the sugar will quickly begin to melt.
Step 4:
Beat the eggs into the butter. Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush. Stir the mixture again until smooth. In this recipe, it is enough to use an ordinary hand whisk, this greatly speeds up and simplifies the cooking process.
Step 5:
Add a pinch of salt — it will serve as a flavor enhancer. Sift flour and cocoa. This will not only rid them of possible debris and break the lumps, but also saturate them with oxygen, which will make the baking more airy.
Step 6:
Stir the dough until completely smooth. According to the consistency, it will turn out like thick sour cream. If suddenly the dough turns out to be thicker (it will depend on the quality of the flour), then dilute it with a small amount of warm milk.
Step 7:
Take a suitable baking dish. Any heat-resistant form is suitable for this recipe. If you use a silicone mold, then you do not need to smear it with oil. But it is better to lightly lubricate metal, ceramic or glass dishes with vegetable oil so that the baking does not burn. Pour the dough into the mold and spread it evenly with a spatula.
Step 8:
Bake brownies in the oven preheated to 190 ° C, top-bottom mode, 10-20 minutes. The baking time depends on many factors. The size of the mold, the features of the oven and your preferences. For a given number of products, the shape of 15 * 15 cm is best suited. Brownies are usually not baked to the end — inside it should remain moist. But if you don't like this kind of baking, bake it longer, until the toothpick is dry.
Step 9:
I generally like brownies by the type of fondue — when an almost liquid middle turns out inside. It's up to you, see to your liking. Cut the finished brownie into squares and serve to the table. How to melt butter in the microwave?
Cut the butter into small pieces and place it in a special container. To prevent the oil from splashing when heated, cover the oil vessel with a paper towel. The oil should be melted either at the lowest power or in defrosting mode. At first, five seconds will be enough. Next, if the butter has not melted yet, set it again for 5 seconds and start the microwave. Repeat the process several times until the desired result.
How to melt butter in a water bath?
You will need two containers of different diameters. Pour water into a large one and put it on the stove. Place the smaller container on top so that it is submerged in water by about half. Put the sliced butter into it. Under the influence of boiling water, the oil will begin to melt. Stir the oil slightly to speed up the process. As soon as the pieces of oil are completely dissolved, remove the container from the stove.
