Step 1:

Add soda and mix. The mass will begin to foam and increase in volume. This is the reaction of honey with soda. Leave everything to cool down to a warm state.

Then add the sifted flour and knead the dough.
Step 7:
The finished dough is soft, plastic and does not stick to your hands. Leave him to lie down for a while. If the cakes will not be baked immediately, then you can put the dough in a bag in the refrigerator and store it for a week.
Step 8:
Roll out the dough on a sheet of parchment and cut out the future size of the cakes with a mold. Remove the excess dough. Place in the oven, preheated to 180 degrees, for 3-5 minutes. Honey dough is prepared very quickly. The blanks will become golden in color. Cool them down. The number of finished cakes will depend on the selected diameter of the blanks.
Step 9:
For the cream, whisk the cream, with a fat content of 33%, with powdered sugar to a fluffy stable cream. Then mix the curd cheese into the cream.
Step 10:
Put the finished cream with a pastry bag on honey cakes. If desired, you can add jam to the center. I really like the combination with black currant.
Step 11:
Assemble the cakes completely, put them in a resealable dish and put them in the refrigerator overnight. In a closed container, all the moisture from the cream will soak into the cakes and make them soft and juicy.
Step 12:
Ready-made cakes can be decorated with any fruit or berries. Have a nice treat!
