Step 1:

Step 2:
In a bowl, sift the flour, extinguish the soda with vinegar. Beat in the eggs one by one and knead the dough. Add softened butter, sugar, vanilla, a pinch of salt and mix everything well.
Step 3:
Add honey and mix well again.
Step 4:
Add almonds and knead the dough until it becomes elastic. For convenience, you can sprinkle your hands with flour. The dough is very dense and almonds are always trying to "fall out" of the dough, but don't let it bother you.
Step 5:
Cut the pre-soaked dried fruits (if they are very hard) into sufficiently small pieces.
Step 6:
Continuing to knead the dough, add dried fruits to it, adding flour as needed.
Step 7:
Divide the dough into several parts and roll them into sausages.
Step 8:
Cut the sausages into pieces about 4-5 cm long .
Step 9:
Put them on a baking sheet lined with parchment paper. Grease with beaten egg.Bake at 180 * 25-30 minutes.
Step 10:
Cookies, almost "cantucci" ready. You can drink coffee.
If you are not lazy and hold the cookies in the oven a little longer (another 7-10 minutes), you will get almost a real "cantucci". Why is it almost real in Tuscany.
