Step 1:

The dough for buns is prepared very quickly, it is not necessary to withstand it and even harmful (it may not rise), so you can immediately turn on the oven (top / bottom) and heat it up to 180 degrees. In a bowl we put natural cottage cheese of any fat content. Fat content does not affect the quality and taste of buns, even fat-free cottage cheese makes fluffy and soft buns.
Step 2:
We drive chicken eggs into the cottage cheese and add sugar, a pinch of salt and a pinch of vanilla. Carefully mix the ingredients with a hand whisk or mixer, then add vegetable oil and mix until a homogeneous mass is obtained. It is better to pre-rub the cottage cheese through a fine sieve or beat it with a blender to make it more airy.
Step 3:
Pour in parts of sifted wheat flour, combined with baking powder. Sift a small part of the flour without baking powder to be able to adjust the density of the dough. If desired, the factory-made baking powder can be replaced with home-made baking powder (mix 3 tsp. of fine citric acid (or crushed in a blender), 5 tsp. of soda and 12 tsp. of flour - mix everything and store it closed in a jar, take it according to the recipe as baking powder).
Step 4:
Add flour in batches, first mix the dough with a spoon or mixer.
Step 5:
When the dough becomes so viscous that it is difficult to mix with a spoon or blender, we spread it on the work surface sprinkled with flour and continue kneading with our hands. But it is necessary to moisten your hands with cold water so that the dough does not stick to your palms. The dough for buns should be soft and elastic, slightly sticky and not too dense - do not clog it with flour!
Step 6:
Flour may be required exactly according to the recipe, or less, or a little more, but the dough should be soft. A baking sheet or baking dish is covered with parchment and lubricated with oil. Divide the dough with your hands into 7 pieces of the same size. Roll the balls out of them with wet hands and put them on a baking sheet. If the balls do not turn out smooth and round, it's okay, they will straighten out during baking. Top the buns with sour cream and sprinkle with sugar.
Step 7:
We send a baking sheet with buns in a preheated oven at 180C for 20 minutes. But the baking time may vary depending on the operation of your oven. The buns should be slightly browned on top. We take the buns out of the oven, remove them from the baking sheet, let them cool down a little and serve them to the table with tea, coffee, cocoa or milk.
