The cake has an indescribably delicious and fragrant crust! As I have already written somewhere, I am not a fan of banana pastries. However, there is one recipe that won me over: chocolate banana cupcake. And now also this curd cake with bananas, the recipe of which I am in a hurry to share.

    Add eggs, sugar and vanilla sugar to the curd-banana puree. Beat everything until fluffy. The mass should increase 2-3 times.

    Add soft butter and beat again until smooth. It's okay if the butter goes in flakes in the dough and there is no uniformity. With the addition of flour, the dough will straighten to the desired consistency.

    Sift flour with baking powder and add to the dough.

I don't even know what I like more about it - a slightly crispy caramel crust with a bright banana flavor and aroma or a moist, soft and tender crumb. As it turned out, cottage cheese and bananas are friends in baking no less than bananas and chocolate.
A few additions to the recipe:
1. Which bananas fit here. Firstly, fragrant. It is very important. Not overripe, without black dots. The taste of such pastries will not be so good, although someone may disagree with me. Plus, such bananas darken quickly, which can spoil the appearance of the cupcake.
But bananas should not be green and too hard. They are not ripe yet and they will practically not be felt in baking. We need bright yellow fruits with a bright aroma. Therefore, do not hesitate to sniff at such bananas in the store.
2. Eggs with sugar and vanilla sugar can be beaten separately until fluffy. And only then add the curd-banana puree to them. And it is better to beat the eggs first, and then mash the bananas with cottage cheese. It is so likely that the bananas will darken while you are busy beating eggs.
