Step 1:
Wash the beef and dry it with paper towels.
Step 2:
Cut in the center, but not to the end, to the middle of the thickness, then make perpendicular cuts to the left and right of the center. That is, the meat can be laid out like a book. We beat it into a flat layer, salt and pepper on both sides. During the beating, I recommend covering the beef with cling film so that the splashes do not fly in all directions.
Step 3:
Preparing the filling. To do this, combine raw mushrooms ground in a blender in a deep bowl, finely chopped and fried onion, chopped dill, egg, breadcrumbs and salt.
Step 4:
Pour grated parmesan. Mix everything well. The filling is ready.
Step 5:
Spread the filling evenly on the meat layer. Roll the beef into a roll and fasten it with a thread.
Step 6:
Fry the roll in vegetable oil and then bring it to full readiness either in the oven or under the lid in a frying pan. The dish is ready to serve!
Minced meat rolls are one of my culinary weaknesses. They can always be beautifully decorated and they look original and exquisite. It takes a little tinkering with the meat to properly carve it, but the effort is definitely worth the time spent. Instead of beef, you can take veal - I sometimes alternate, depending on what kind of meat I have at hand at the moment. With the filling, you can safely improvise and add something of your own to it. When I cook such a roll on the occasion of some celebration, I always radiate confidence that it will not stay on the table for a long time. This has already been tested more than once! It is eaten very quickly, especially when there are many men among my guests - famous lovers of meat dishes. My friends were happy to take the recipe from me and everyone has already prepared such a stuffed meatloaf with champignons. This cold appetizer is in demand, including because it does not even need to be served separately with a side dish. It is already satisfying and, one might say, self-sufficient. Bon appetit!
