Remove the pan from the heat, add the egg yolks to the mixture and mix well.
Step 7:
Beat egg whites into a steep foam.
Step 8:
Add the proteins to the cheese mixture.
Step 9:
Gently and smoothly mix until smooth.
Step 10:
Grease the molds with butter and sprinkle with flour. Pour in the cheese mixture.
Step 11:
