From the washed chicken thighs, cut out the bone carefully, chop off the meat, season with salt and pepper.
Soak dried apricots in hot water for 20 minutes.
Cut the leek into pieces.
Put 3 pieces of dried apricots and several rings of leek on the beaten chicken meat.
Wrap the chicken in a roll, tighten with a thread.
Transfer the rolls with dried apricots to a baking sheet greased with oil. Grease the top with mayonnaise mixed with chopped garlic.
Bake at high heat in the oven for 20 minutes. Then reduce the heat to a small one and bake for another 20 minutes.
Ready-made rolls with dried apricots sprinkle with peeled toasted and chopped seeds and fresh herbs on top.
