Step-by-step cooking
Step 1:
Chopped dough: chop 200 g of flour and 100 g of cold butter into a crumb (I pre-send the butter to the freezer for 15-20 minutes), place the crumb in a bowl, make a recess, break the egg there and add a couple of tablespoons of ice water, salt and knead the dough. This should be done quickly so that the butter does not start to melt from the warmth of the hands, otherwise the baking will turn out to be tough. (Butter should melt when baking in the oven, then it will be crispy and delicious).
Step 2:
Roll the dough into a ball.
Step 3:
Wrap in foil and place in the refrigerator for an hour.
Step 4:
After an hour, take it out of the refrigerator and roll it out 4-5 mm thick, sprinkling a little flour (I roll it out on parchment). Transfer the dough together with parchment paper into a pie pan (I have a 23cm shape).
Step 5:
Turn the dough onto the form with parchment up, then carefully remove the paper, prick the dough with a fork.
Step 6:
Place foil on the dough and pour a load on it (I used lentils, you can take beans, peas, etc.) and bake 15 minutes at 200C.
Step 7:
Boil broccoli in salted water for four to five minutes. Flip on a sieve and let the water drain. Boil the chicken breast until tender, when cooking, you can add bay leaf and your favorite seasonings. Cut the broccoli and breast into pieces. Grate the cheese. Prepare the filling - shake two eggs in a bowl, add salt and ground black pepper. Pour in 200g of cream and stir.
Step 8:
Remove the load from the cake and bake for another 10 minutes, then put the filling on it - half the cheese, chicken, broccoli and tomatoes.
Step 9:
Sprinkle with the remaining cheese and pour in the filling. Bake at 180 degrees for 20 minutes.
KISH is an open snack pie originally from France. There are many options for fillings for kish - chicken, broccoli, spinach, red fish, mushrooms. You can cook according to your taste and mood. Only the base of the shortbread dough and the filling of eggs and cream do not change. I liked the kish and my loved ones, but I, as a supporter of proper nutrition, will make a base for myself from wholegrain or corn flour and reduce the amount of butter or replace it with coconut. Well, the filling of broccoli, chicken breast, tomatoes and cheese, and the filling suits me perfectly - everything is delicious and healthy!
