Step-by-step cooking
Step 1:
Dough. To prepare the dough for the pie, we will need: wheat flour, oat flour, butter, brown sugar (can be replaced with regular), cinnamon and salt.
Step 2:
Cut cold butter into cubes.
Step 3:
Put wheat and oat flour, pieces of butter, cane sugar, cinnamon and salt into the bowl of a blender or combine with a knife attachment. Beat everything into fine crumbs.
Step 4:
Pour the resulting crumbs into a bowl and put in the refrigerator.
Step 5:
Filling. To prepare the filling for the pie, we will need: cherry plum and brown sugar.
Step 6:
Wash the cherry plum, dry it. It is better to choose dense, but not green fruits, so that during baking they retain their shape and do not spread out. The same applies to plums, if you decide to replace cherry plum with them.
Step 7:
Cut the cherry plum in half and remove the bones. Cut each half into two more parts.
Step 8:
In a baking dish lined with parchment (I have a square 25 × 25 cm, but you can also take a larger form), put all the sand crumbs and smooth them out.
Step 9:
Spread the cherry plum quarters on top. Sprinkle it evenly with 1 tbsp. l. cane sugar.
Step 10:
Put the mold in a preheated 180 ° C oven for 30-35 minutes.
Step 11:
Remove the finished cake from the mold, cool and cut into portions. Enjoy your meal!
I found the recipe on the Internet. However, there is little left of the original recipe. Rather, only the dough remains. And the filling was supposed to be made from plums, which had to be ground in a blender and distributed between two layers of sand crumbs. I can say that oatmeal dough perfectly harmonizes with sour and juicy cherry plum.
The only thing that was used in the original recipe was ordinary sugar. I decided to replace it with reed to give the dough a brighter and richer color. And the taste of brown sugar in the shortbread dough and in the filling turns out to be more interesting.
