Step 1:

Pour two hundred milliliters of warm kefir at room temperature into a small bowl, then put twenty grams of fresh pressed yeast into it and pour out twenty-five grams of sugar.
Step 3:
Add thirty grams of wheat flour to a common bowl.

Mix all the ingredients in a bowl until smooth and put it in a warm place for fifteen to twenty minutes to activate the yeast.
Step 5:
Break one chicken egg into a volumetric bowl, then add forty grams of melted butter to it and mix well together.
Step 6:
Pour the sourdough with activated yeast into a bowl with egg-oil mixture.
Step 7:
Mix all the ingredients together in a bowl until smooth.
Step 8:
Sift three hundred grams of wheat flour in parts into a bowl with a liquid base and pour into it one not full teaspoon of salt.
Step 9:
Mixing all the ingredients in a bowl, knead the dough together and, if necessary, add a little flour.
Step 10:
We continue to knead the dough well in a bowl with our hands for about five to seven minutes.
Step 11:
We collect the kneaded dough into a lump, which we then put into a bowl and lubricate with a small amount of vegetable oil, after which we cover the bowl with a kitchen towel on top and put it in a warm place for one hour.
Step 12:
To prepare the filling, finely chop three hundred grams of onion, which we then put in a bowl and add salt to it to taste.
Step 13:
Knead the onion well in a bowl with a pusher until the juice appears, then pour dried herbs, cumin, coriander into a bowl to taste and mix.
Step 14:
We put five hundred grams of sliced chicken fillet in a bowl with onions and spices.
Step 15:
We put four hundred grams of diced potatoes in a common bowl and mix all the ingredients well together.
Step 16:
Add a mixture of black and red peppers to a common bowl to taste and after mixing all the ingredients again, set aside the bowl with the prepared filling.
Step 17:
After a while, we spread the well-risen dough on a table sprinkled with a small amount of flour.
Step 18:
We knead the dough and form it, then cut it into larger and smaller parts.
Step 19:
Knead most of the dough and roll it out to a two-millimeter thick cake.
Step 20:
Wrap the tortilla on a rolling pin, then transfer it and put it in a mold that has been pre-lubricated with a small amount of vegetable oil.
Step 21:
Evenly distribute the cake in the mold and form the sides.
Step 22:
Sprinkle the tortilla with a small amount of breadcrumbs.
Step 23:
Mix the prepared filling in a bowl once again and spread it evenly into the mold.
Step 24:
We spread the fillings on top in the form of thirty grams of butter in pieces.
Step 25:
Roll out the second part of the dough to a thin cake, then transfer it and put it in a mold on top of the filling.
Step 26:
We interlock the edges of the cakes well together, decorate with openwork molding and make a small hole in the middle.
Step 27:
We spread decorations made of dough on top of the pie and put it on proofing in a warm place for thirty minutes.
Step 28:
Put the mold in a preheated oven to one hundred and seventy-five degrees and bake the pie for one hour, then take the mold out of the oven and grease the pie with egg yolk whipped with milk on top, after which we put the mold in the oven and reducing the temperature to one hundred and fifty degrees, we continue to bake the pie for another twenty to thirty minutes until fully cooked.
Step 29:
We release the cooked pie from the mold and put it on the table.
