Step 1:
Dough. To prepare a charlotte dough on a shortbread dough, we will need: premium flour; cold butter; eggs; sugar and baking powder.
Step 2:
Sift flour with baking powder. I used baking powder with saffron.
Step 3:
Cut cold butter into cubes. Pour flour and butter into the blender bowl.
Step 4:
Beat everything into fine crumbs. You can not whip, but rub everything with your hands. But if you need to do everything quickly, then you can't find an assistant better than a blender or a food processor.
Step 5:
Separately, beat the eggs with sugar until fluffy.
Step 6:
Pour the flour crumbs into the beaten eggs and knead the elastic dough. As the dough is kneaded, it will stick to your hands less and less. Until it eventually becomes completely non-sticky. If this does not happen, add a little flour (1-2 tablespoons). That should be enough.
Step 7:
Roll the dough into a ball, wrap in foil and put in the freezer for 40-45 minutes. It should cool well so that it can be easily grated.
Step 8:
Filling. To prepare the filling, we will need: fragrant sweet and sour apples; sugar and ground cinnamon.
Step 9:
Wash the apples, peel them from the core and grate them on a coarse grater.
Step 10:
Add sugar and cinnamon to the apples.
Step 11:
Mix everything well. If the apples darken, it's okay.
Step 12:
In a form lined with parchment, rub half of the dough. Tamp the dough with your hands, form low sides. This is necessary so that the apple juice does not flow out of the pie.
Step 13:
Put the apple filling on top and smooth it out.
Step 14:
Rub the rest of the dough evenly on top.
Step 15:
Bake the charlotte for about 30 minutes at 180 °C. Cool the pie slightly, cut into portions and serve. Bon appetit!
One of the recipes suggests adding 2 tablespoons of corn starch to the apple filling. So the filling will be more like apple jam. And the juice released during baking will not flow out, but on the contrary will thicken. I didn't add starch. And I do not advise adding it if the apples are not very juicy anyway. In this case, the filling will turn out to be dry.
In general, the word charlotte is associated with biscuit dough for everyone. However, there are many recipes for shortbread charlotte on the Internet, which is nothing more than an ordinary closed shortbread pie with apple filling inside.
