Step 1:
Prepare the ingredients. The secret of making a delicious and successful honey cake is the use of not fresh liquid honey, but already thickened. Margarine, eggs and butter are removed from the refrigerator in advance, they should be at room temperature.
Step 2:
Margarine and honey are dissolved in a water bath.
Step 3:
To do this, it is better to use a glass bowl, which we place in a saucepan with water so that it does not reach the bottom of the bowl a little.
Step 4:
When they turn into a homogeneous mass, pour sugar into a bowl and stir constantly until the sugar dissolves.
Step 5:
Then add the soda and stir the mass until it turns white and increases in volume. Then remove the bowl with the dough preparation from the water bath and leave to cool.
Step 6:
When the mass becomes warm, beat the eggs into it and mix thoroughly with a spoon or mix with a blender.
Step 7:
Then pour in the sifted flour, it is better not to pour it all at once, but in portions so that the dough is well mixed.
Step 8:
Knead a soft elastic dough, but it should stay in the ball, not spread out and not crumble. We wrap it in plastic wrap and put it in the refrigerator for an hour.
Step 9:
Take the finished dough out of the refrigerator, divide it into 8 parts. We roll them into balls, roll each ball into a thin cake.
Step 10:
You can immediately cut a circle from it on a plate of the desired size, or cut a cake from the baked dough. We prick each cake with a fork so that it does not swell.
Step 11:
Preheat the oven to 180 degrees. Bake each cake for 7 minutes on average. Take it out of the oven when it is slightly browned. Let the cakes cool down. We will also bake the remains of the dough and turn them into crumbs with a rolling pin or a coffee grinder, we need them for sprinkling the cake. Let the cakes cool down.
Step 12:
Meanwhile, prepare the cream. Butter softened at room temperature is beaten with a mixer with a can of condensed milk. If desired, condensed milk can be pre-cooked in a jar, but honey cake tastes better if condensed milk is not boiled.
Step 13:
Lubricate each cake with cream, cover it with the next one.
Step 14:
The top of the cake and sides are also lubricated with cream. Sprinkle the cake with crumbs. Decorate as desired, you can use ready-made poppy flowers. We put the cake in the refrigerator overnight so that it is well soaked.
Step 15:
Served with tea or coffee. Have a nice tea party!
