Step 1:
Prepare all the ingredients. Buy butter with a fat content of 72% or higher. Sift the flour before use, be sure to remove all the specks or saturate it with oxygen. Take a small egg. Milk or black chocolate is suitable.
Step 2:
Remove the butter from the refrigerator, but not from the freezer. It should not be too hard. Cut it into small pieces and move it to a deep whipping bowl. This process can be done in a food processor or dough mixer, if you have such a technique. I will do everything with a hand mixer, although you can do it with your hands.
Step 3:
Add granulated sugar.

Whisk the contents of the bowl until the butter is white and fluffy. It took me 7-8 minutes, since my technique is not very powerful (550 watts). You are guided by your technique. You may need more or less time to achieve the desired result.
Step 5:
Beat the egg into the beaten butter. Continue working with the mixer until a homogeneous mass is formed. In my case, it took 3-4 minutes.
Step 6:
Pour in the prepared flour. Mix with a mixer until smooth. It is not necessary to beat for a long time, The main thing is that there are no flour lumps.
Step 7:
In the end, you should get a sticky shortbread dough. You do not need to add flour if you want the baking to turn out crumbly
Step 8:
Move the dough with a spatula onto the food wrap. Wrap it in it and send it to the refrigerator for 1-2 hours, you can leave it in the refrigerator overnight. The dough will become more dense.
Step 9:
For convenience, divide the dough into two halves. While you are working with one part, send the second one to the refrigerator. Take two sheets of parchment. Dust a little with flour. Lay out a piece of dough and roll out between two sheets of parchment into a thin layer.
Step 10:
To shape it, we will need to cut down the bear. Molds can be bought in confectionery online stores or in supermarkets in confectionery departments. To prevent the dough from sticking to the mold, dip it in flour and cut out the figure.
Step 11:
Squeeze out the eyes with a skewer or other suitable object. Give each bear a nut. Fix the almonds with your hands. This will be our bump. Transfer the parchment with the blanks to a baking sheet and place in a hot oven for 8-15 minutes at a temperature of 180 degrees. The baking time depends on the power of the oven. Focus on your technique. The specified time may vary up or down.
Step 12:
Cool the finished cookies to room temperature.
Step 13:
Take a slice of chocolate. Place it in a small disposable pastry bag. Dip in boiling water several times to melt the chocolate. Cut a small hole at the bottom and make chocolate eyes. That's all the cookies "Bear with a bump" are ready.
