Composition / ingredients
Step-by-step cooking
Step 1:
First, prepare the custard. For it you will need: Milk, I have a fat content of 3.2%, room temperature. Yolks at room temperature. Corn starch, sugar, salt, vanillin.
Step 2:
In a saucepan with a thick bottom, I combine yolks, salt, vanilla, sugar, starch, 50 grams of milk (room temperature) and mix the mass...
Step 3:
So that there are no lumps.
Step 4:
Then the remaining milk. Stir again ...
Step 5:
And on the stove at a lower than average heat, with constant stirring, I brew the cream.
Step 6:
Bring to a boil.
Step 7:
I remove from the heat, let it cool down a little, cover it in contact and set it aside for now.
Step 8:
Baking dish size 20*20. The bottom and sides were greased with vegetable oil, covered with parchment. And immediately turn on the oven to warm up to 170 degrees.
Step 9:
Next biscuit dough. For him, you will need: Sifted flour. Sugar, salt, vanilla. Baking powder. Eggs of category C1, room temperature.
Step 10:
Combine the sifted flour with baking powder. Mixing it up. I'm putting it aside for now.
Step 11:
Eggs are divided into yolks and whites. You don't have to do this and whisk everything at once, but it seems to me that it's faster. Dishes and corollas should be dry and clean. Also, not a drop of yolk should get into the protein. I add salt, vanillin and half the sugar to the protein. The second half of the sugar to the yolks.
Step 12:
I whisk the proteins first at minimum speed, gradually increasing to a dense, stable foam.
Step 13:
I beat the yolks with the same whisk, not mine, until they are slightly whitened and increase in volume.
Step 14:
I combine yolks and whites. Mixing it up. For convenience, I pour more into the container.
Step 15:
In 2 passes, sift the flour with baking powder into the egg-sugar mixture. Gently mix.
Step 16:
The dough is ready.
Step 17:
Berries or fruits can be absolutely anything. It's also very tasty with apples. I have strawberries. I do not advise taking more (by weight) because it is quite watery and the finished cake may be wet. I wash my strawberries, dry them, peel them, cut them.
Step 18:
Add starch, mix.
Step 19:
Add the filling to the dough, mix gently.
Step 20:
Leveling up.
Step 21:
The cream will be thicker after cooling, although it is still warm enough.
Step 22:
For convenience, I put it in a pastry bag.
Step 23:
I put the grill on top of the pie.
Step 24:
I send it to a preheated oven to 170 degrees, bake until ready, the approximate time is 35-40 minutes. I check the readiness with a wooden stick, it should come out dry and clean.
Step 25:
I let it cool completely in the form, then I transfer it to a dish, if desired, I sprinkle with powdered sugar and you can call everyone for tea.
Step 26:
Have a nice tea party!
