Step-by-step cooking
Step 1:
Put margarine or butter, granulated sugar, cinnamon, vanilla sugar, raisins crushed in a blender in a container. Mix the mixture thoroughly (grind) for 5 minutes. I use a mixer.
Step 2:
Add, with continuous stirring, oat flour, hot water heated to a temperature of 70-90 ° C, with salt dissolved in it. Stir for 2-4 minutes. You can add cookie crumbs (no more than 5% of the flour weight).
Step 3:
Add the remaining water, wheat flour, slaked soda and other ingredients. Knead the dough until smooth, but no more than 6 minutes. The test temperature should be 24-27 ° C, humidity 16-19%.
Step 4:
Roll out the dough into a 9-11 mm thick layer and then cut circles using a round container with a diameter of 38 mm. Bake for 8-13 minutes in a preheated 180-240 °C oven. I'm too lazy to cut out round cookies :)
I always modify the recipe myself. I put only half the sugar, but I don't regret the raisins.
It's too lazy to look for molasses, and jam (replacing molasses) makes cookies too crumbly.
If the flour is of the highest grade (sticky), I reduce its amount in favor of oatmeal.
