To prepare a caramel honey cake, take a spacious, large saucepan. Cut butter into it and add honey. Put it on the fire and start to melt.
As the butter is almost melted, add the sugar. Stirring occasionally, bring the whole mass to a boil.
Add baking soda to the boiling mass, mix and remove from heat.
When adding soda, it will immediately react with honey. The whole mass will immediately begin to foam and increase in volume. After thoroughly mixing, set the pan aside and cool to a warm state.
Mix the eggs into the warm mass.
Gradually start adding flour sifted through a sieve. Thus knead the honey dough.
Put the finished dough in the refrigerator, wrapping it with cling film. Let him lie down, at least one hour. During this time, the dough will lie down and be ready for use.
Divide the cooled dough into pieces and roll out the honey cakes. The number of cakes will depend on the diameter of the cake that you need.
My cake was low, but wide in diameter.
Roll out all the cakes very thinly and cut out a circle of the required diameter. Bake each cake in an oven preheated to 180 degrees for 5 minutes.
Bake all the cakes and cool them completely. Also, bake all the dough scraps.
To prepare the cream, take sour cream with a fat content of at least 25%.
Combine sour cream with powdered sugar and whisk everything together into a fluffy cream.
With the finished cream, smear, in turn, all the cakes and assemble the cake. Top and sides, as well, smear with cream.
Chop the baked dough scraps into crumbs and sprinkle the cake on the sides and top with this crumb.
Put the finished cake in the refrigerator for a few hours so that it is well soaked with cream. It is best to leave it overnight.
