The finished pieces of potatoes should be covered with a beautiful golden crust. Inside, baked potatoes in a rustic way should be soft.
Such potatoes are suitable both as a side dish and as an independent dish for everyday or festive lunch. All kinds of sauces and chutneys go well with it. In summer, it is good to use early potatoes with thin skins that do not need to be cut. This is a universal recipe, because you can bake both old and young potatoes without a peel.
Golden, ruddy, fragrant potatoes, sliced and baked to an impossibly appetizing crispy crust in the oven, are traditionally called "rustic". "Rustic" is not a specific recipe, but rather a generalized way of cooking delicious potatoes. Firstly, it is very simple, relatively fast and economical. To cook a whole pan of hearty potatoes in a rustic way according to the most concise, basic recipe, you, in addition to a few potato tubers, will need a little oil, salt and your favorite spices. Excellent potatoes in this version are combined with black pepper, aromatic herbs from the Mediterranean, the Caucasus or a Provencal mixture, mustard, marjoram. Turmeric, paprika or curry will give the slices a beautiful color. The amount and ratio of spices can be changed to taste.
