Step-by-step cooking
Step 1:
Sift flour and powdered sugar. Butter and yolks at room temperature. Spices optional, I have: cinnamon, nutmeg, star anise, cardamom, cloves. Medium-sized tangerines 4-5 pcs. The zest of one orange.
Step 2:
Beat softened butter with powdered sugar until white.
Step 3:
Then beat the yolks and whisk until fluffy and smooth.
Step 4:
Then salt, zest, juice, spices and whisk again.
Step 5:
Then add all the flour and knead well.
Step 6:
The dough should be homogeneous, well kneaded, not sticky, soft.
Step 7:
Divide into 2 equal parts...
Step 8:
Form sausages about 5 cm thick.
Step 9:
I wrap it in a bag or plastic wrap and put it in the refrigerator for 3 hours.
Step 10:
When the rest time of the test is coming to an end, I will prepare tangerines. I wash, wipe and cut into rings about 0.5 cm thick .
Step 11:
I put it on a paper towel and leave it for 20 minutes. Then, on a new towel, I do the same with the reverse side.
Step 12:
When the dough has rested, I adjust the size to the size of a tangerine. Rather, the diameter of the dough should be slightly larger than a tangerine.
Step 13:
I cut the dough into 15 pieces.

I put it on a baking sheet.
Step 15:
Now you need to take some kind of mold (glass, cup) in diameter like a tangerine ...

Soak in sugar, if it doesn't stick, you can wet it with water ...
Step 17:
And in the center make a small recess for the tangerine. The mold needs to be soaked in sugar every time.
Step 18:
Grease the edges with the shaken yolk.
Step 19:
Put a piece of tangerine in the center and seal it slightly. Sprinkle sugar on top. And I send it to a preheated oven to 170 degrees for 25-30 minutes, cook until ready.
Step 20:
My cookies were baked for 30 minutes. While the cookies are hot, they are very fragile. I let it cool down slightly.
Step 21:
Then I put it on the grill and leave it to cool completely.

Can be lightly sprinkled with powdered sugar... And the cookies "Sun" are ready:)

I really like baking with almond flour. It gives the product a special structure and taste. The cookies are crumbly, very tender, moderately sweet, fragrant and spicy. A tangerine gives a special charm and beauty. A box of such cookies on the festive table will not leave anyone indifferent.
