Cupcake (literally "cup cake", also known as fairy cake — "fairy cake") is the American name of the cupcake. A small-sized cake (5-6 cm in diameter and weighing 60-65 gr.), intended for consumption by one person, baked in thin paper or aluminum baking dish. It often contains various elements of confectionery decorations.
The first cupcake recipes were recorded in cookbooks in 1796 and 1828. The ingredients are usually butter, sugar, eggs and flour, although there are several different recipes. In English-speaking countries, cupcakes are often served on birthdays.
As a rule, cupcakes are made from the same ingredients as large cakes: butter, sugar, eggs and flour. Almost any cake (sponge cake) recipe can be used to bake a cupcake. The dough can be flavored or ingredients such as raisins, berries, nuts or chocolate chips can be added to it. Due to the small size, cupcakes are baked much faster than ordinary puff pies.
Cupcakes can be covered with icing or other decorations. They can also be filled with icing or pastry cream. When making a small number of cupcakes with stuffing, holes in them can be made with a spoon or a knife. In commercial bakeries, the filling is usually injected with a syringe.
