Uzbek flatbread with minced meat

National baking at home! It's worth cooking! Traditional Uzbek tortillas imply cooking in a tandoor, but this recipe allows you to get exactly the taste and aroma in a conventional oven. The airy dough stays fresh for several days, and the meat filling gives a wonderful taste!

We heat the water to a warm state, no more than 36 degrees, otherwise the yeast will cook. Pour half a glass of warm water, add a tablespoon of flour, pour out the yeast, stir and leave for 10 minutes until a cap is formed.

Pour the rest of the warm water into a deep bowl, add salt and water with a yeast cap. Stir well and start adding flour. It must be sifted in advance into a separate bowl, poured into yeast water and kneaded. First we stir with a fork, and when the dough becomes too thick, we continue with our hands. Knead the dough for about 7 minutes, until it becomes soft, smooth and does not stick to your hands. We collect the dough into a ball, cover it with a film and leave it to approach for 2.5 hours.

When the dough has increased several times, we take it out of the bowl, stretch it into a flat cake, fold it several times and leave it for an hour. During this time, it will rise again, become smooth and shiny.

We take the minced meat ready, beef is best, but you can use any, including a combination of different types. If desired, you can cook it yourself by passing a portion-cut piece of meat through a meat grinder.

Peel the onion, wash it, dry it and cut it very finely, you can even grate it. Add the onion to the minced meat, we also send cumin, dried basil, ground pepper and salt there. Knead the minced meat well with a fork or with your hands so that the spices and onions are evenly distributed.

We put half of the dough on the table, dusted with flour, and roll it into a flat cake with a diameter of about 25 cm. Spread half of the minced meat on top of it, take it in small portions, flatten it and spread it on the surface. We wrap the dough with meat in a roll, twist it and cut it in half. We put the cake on the slice, press it down in the middle, forming a cake. We straighten the dough to the edges. We spread the tortilla on a baking sheet covered with paper and do the same with the rest of the dough.

Bake the tortillas at 200 degrees for 15 minutes, then lubricate the surface with egg, sprinkle with sesame seeds and bake for another 15 minutes. The tortillas are ready, you can serve them to the table.
