Cooking method
1. Turn the oven on 180 degrees Celsius for preheating.
2. Peel garlic, disassemble into cloves, rinse and dry. Then put it on a cutting board and chop it finely.
3. Rinse the parsley and dill under running water, dry, spread on a towel and finely chop with a sharp knife.
4. Pour the chopped garlic into a mortar. Add sea salt and seasonings - ground coriander and cumin. Using a mortar, grind the spices to a homogeneous state of mush. Then add chopped parsley and dill to this mixture. Mix the resulting mixture of spices well together.
5. Clean the ice fish, gut and remove all the insides and cut off the fins. It is also advisable to remove the dark vein that runs along the back of the fish cavity, as it gives the finished dish an unpleasant taste and aroma. Then rinse the fish thoroughly under cool running water and wipe dry with paper towels.
6. Put the prepared ice fish on the work surface and thoroughly rub the fish carcass outside and inside with a mixture of crushed spices and seasonings, generously seasoning it from all sides.
7. Put a large enough sheet of food foil on an oven tray or in a baking dish and put an ice fish in the middle of this sheet.
8. Rinse the lemon under the tap with cold water, dry and cut into small slices. Then stuff these lemon slices into the inner cavity of the fish. Also put a mixture of crushed garlic, spices and fresh herbs inside the carcass.
9. Generously lubricate the fish carcass with olive oil from all sides.
10. Collect the edges of the food foil, wrapping the fish inside the sheet, and tightly pinch them so that the fish is cooked in its juice.
11. Put the fish to bake in a preheated oven for about half an hour until fully cooked.
12. The finished ice fish baked in foil is carefully unwrapped and sprinkled with lemon juice.
